Coconut Chutney Recipe for Idli & Dosa — 10 Minutes, No Garlic
Some mornings just call for soft idlis, a crisp dosa, and a fresh bowl of coconut chutney. This is the classic South Indian version I make on repeat — ten minutes, no garlic, no tamarind, and a mustard-seed tempering on top that makes the whole kitchen smell like home.

#### Ingredients
- 1 cup fresh grated coconut
- 2 tbsp roasted chana dal
- 1–2 green chilies
- ½ inch ginger
- Salt
- Water, to grind
- Optional tempering: mustard seeds + urad dal + curry leaves in 1 tsp oil
#### Method
Grind everything smooth. Finish with the optional tempering if you like.
Chef's note: a tiny pinch of hing bloomed in the tempering oil (10 seconds, with the mustard seeds) adds savory depth without garlic — classic Tamil/Karnataka style.
