Vegan Bliss - luv your beets with yumilicious no oil salad!



Beets have so many good nutritional facts. They are rich in nitrate for lowering blood pressure, reducing anemia, performance boost for the athletics.


Raw beets are hard to consume! Once I had its green stalks along with juiced beets and felt nauseated after I consumed. Don't do that 😉 .Boiled beets are easy to tolerate, though little lower in nutrition facts compared to raw beets. Given the mess on the countertop, I started buying peeled and boiled beets directly. 

Now making the salad was just a matter of 3-5 mins:) One tip is to cut and keep the veggies like beets, carrots, feta cheese cubes in air tight containers in fridge for the entire week. They are fresh and you just need to toss a few in you bowl and good to go.


Recipe

1-2 cups of chopped spinach

1-2 boiled chopped beets

1 large bell pepper  or few small sweet bell peppers

1 cup small cherry tomatoes

1 cucumber sliced

1 tsp of nutritional yeast (adds B12 to your salad and gives the crunch kick)

1/4 cup of non dairy Feta cheese (Good fat to your salad and the key ingredient for skipping the oil or dressing)

1tsp of pine nuts or any other available nuts of your choice


Add sprouts to your salad if you have then. They are considered superfoods.

Add any other veggies of your choice.

Sometimes I put grated carrots to the mix. The more colorful your salad, the more blissful for your tummy  :)


Finally a big nice bowl to mix all these veggies.  Now its time to sit comfortably, unplug from devices and enjoy your salad. 


Beets and Spinach are good for IBS, good in prevention of constipation. They form good source of fibre. Say goodbye to fibre capsules if you are having them on daily basis.

To make it a habit, try eating the salad for 21 days and it will become second nature for you. If you miss for a day or two, its ok. You dont need to judge yourself or feel guilty for not eating healthy. Tune yourself back to eating it again.
